This is a great recipe and should be just the thing to round out my holiday buffet. What are your thoughts on making this ahead? Do you think it would suffer much being made the night before and baked right before the meal?
Hey Jen! Thanks for your question. I think you could definitely make this ahead. What I might do is keep a damp paper towel under the saran wrap to keep the top layer moist. The cauliflower can tend to dry and out from the air. Other than that just pull it out and let it come to room temp before you bake it (or at least take the chill off of it a bit) and it may need just a little more time in the oven to get all hot and bubbly. If you’re unsure about it being hot all the way through I take a butter knife and stick it straight down into the center. If when you pull it out the knife tip is hot, you’re good to go! I hope you enjoy it! (sorry that was long winded!)

can you omit pre-cooking the noodles and just let then cook while baking?

Sorry for the late response. I’m actually working on a new site where a lot of my recipes will be moved over to. I don’t think you could omit precooking the noodles, there isn’t much liquid in the dish itself, so you’re noodles will come out pretty crunchy. You could always experiment with the lasagna noodles that are made for that (putting raw into a lasagna and cooking in the oven) but I can’t guarantee your results, you may end up with a dry dish. If you give it a shot please dont hesitate to let me know how it goes! As I said so sorry for the late response.
