I’ve been all about the savory yet sweet lately. This salsa really hits the spot. You have the sweet mango with the nice crunch of the corn, put that all on a salty tortilla chip and life doesn’t really get any better than that. Regardless of what team you are pulling for on February 7th, everyone will be fighting over who gets the last bite of this salsa.
- 1 15.25 oz can of corn, drained (no salt added)
- 1 mango, peeled and diced
- 1/2 tsp ground cumin
- 1/8 tsp garlic powder
- 2 tsp minced cilantro
- 1 spring onion, diced
- 1/2 lime, juiced
- zest of 1 lime
- 1/2 tsp salt
- pepper to taste
- Combine all ingredients in a medium sized bowl.
