An easy no cook dinner party appetizer. Creamy tangy goat cheese with herbs in a cute cucumber cup.
Sometimes I feel like appetizers are even harder to decide on in terms of menu items than the main course itself. Usually I try and keep appetizers bite size to make it easy for everyone to enjoy the party without having to feel like they are latched to their fork and knives.
Here’s a fun party tip: place snacks out in different areas of your home where people will be gathering. I like to put some of the dining table, this is where a lot of the food will end up throughout the night, and then some gets spread out on the coffee table in the living room or in bowls out on the deck. By doing this you allow people to make conversation anywhere but still have something to munch on. It will keep the party flowing in a nice way. Make sure to put a small stack of napkins anywhere you put out food to keep everything neat and tidy!
The other great thing about this recipe is that it’s no cook. Simply start by piling all the filling ingredients in a food processor pulse a few times and then spoon into cucumber cups. Alternatively this would be great served with some toasted bread, or even in mushroom caps. Don’t worry I’ll be posting a recipe for that soon because it sounds too delicious not to.
Before filling the cucumbers I like to take a half teaspoon measure and scoop out some of the seeds of the cucumber. Not only does this reduce the water content of the cucumber but it gives the cheese a nice place to sit so it doesn’t slide off the slick vegetable.
If you want to get the pretty stripes on the side of the cucumbers, which is totally option but so dang easy why not, just use a peeler to create the pattern on the side. Alternating between peeled and unpeeled cucumber.
So go on party planner! Plan that party and know you’ll have a pretty sweet and easy appetizer that takes little to no time at all. Now…what’s for dessert?

- 1 English cucumber, cut into 3/4 inch rounds
- 1 4oz package of goat cheese
- 1/2 cup packed spinach
- 8 basil leaves
- 1 tbsp chopped walnuts
- 1 clove garlic
- 1/4 tsp salt
- 1/4 tsp pepper
- chives (for garnish)
- Using a 1/2 tsp measuring spoon scoop some of the seeds of the cucumber rounds out so that the rounds resemble small cups, gently pat dry with a paper towel in the cup and set aside
- In a food processor, add all the remaining ingredients, except chives, and pulse until evenly combined
- Pipe/or spoon the cheese mixture into the cucumber cups
- Garnish with chives
